Ingredients:
- 8 oz (225g) Neufchatel cream cheese, softened
- 1/2 cup (120g) plain Greek yogurt, room temperature
- 3/4 cup (180g) pumpkin puree
- 1/3 cup (80ml) pure maple syrup
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (0.5g) ground nutmeg
- 1/4 tsp (1.5g) salt
- 1 cup (240ml) heavy whipping cream, cold
- 2 tbsp (30ml) powdered sugar
- 1 tsp (5ml) pure vanilla extract
- 2 tbsp (15g) crushed graham crackers
- 1/2 tsp (1g) cinnamon powder
- Fresh mint leaves
Instructions:
- Beat the softened Neufchatel cream cheese and Greek yogurt together until the mixture is completely smooth.
- Stir in the pumpkin puree, maple syrup, cinnamon, ginger, nutmeg, and salt. Mix on medium speed until the color is uniform.
- In a separate chilled bowl, whip the cold heavy cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.
- Using a rubber spatula, gently stir about one-third of the whipped cream into the pumpkin base to lighten the mixture.
- Gently fold in the remaining whipped cream using a figure-eight motion until no white streaks remain.
- Spoon the mousse evenly into six glass dessert cups.
- Chill in the refrigerator for 2 hours before serving.
- Garnish with crushed graham crackers, a sprinkle of cinnamon, and fresh mint leaves.
