Ingredients:
- 1.5 cups (150g) Aged Parmesan cheese, freshly grated
- 1/2 tsp Garlic powder
- 1 tbsp Fresh rosemary, finely minced
- 1 tsp Fresh thyme leaves
- 1/4 tsp Cracked black pepper
- 1/2 tsp Dried parsley
- 1 clove Fresh garlic, smashed
Instructions:
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the freshly grated Parmesan, garlic powder, minced rosemary, thyme leaves, and black pepper. Toss thoroughly to distribute herbs evenly.
- Rub the smashed fresh garlic clove directly onto a silicone baking mat or high-quality parchment paper to deposit essential oils without the risk of burning fresh garlic bits.
- Place tablespoon-sized mounds of the cheese mixture onto the prepared baking sheet, leaving approximately 2 inches of space between each mound. Flatten slightly with the back of a spoon.
- Bake in the center rack for 6 to 8 minutes. Watch for a 'Lace Effect' where edges turn a deep mahogany and the center remains golden and bubbling.
- Remove from oven and allow the crisps to set on the hot tray for exactly 60 seconds.
- Using an offset spatula, transfer the crisps to a cooling rack or cold plate to stop the cooking process and achieve a shattering snap.
