Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (45g) unsweetened cocoa powder
- 2 cups (240g) icing sugar, sifted
- 1 1/2 cups (150g) crushed digestive biscuits or graham crackers
- 1/2 can (200g) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 cup (90g) finely shredded coconut, for coating
Instructions:
- Spread the shredded coconut evenly onto a shallow plate or tray. Set aside.
- Gently melt the butter in a saucepan over low heat or in short bursts in the microwave. Do not let it brown. Remove from heat.
- In a large mixing bowl, combine the sifted icing sugar, crushed biscuits, and cocoa powder. Whisk briefly to ensure even distribution.
- Pour the melted butter, condensed milk, and vanilla extract into the dry mixture.
- Use a sturdy spatula to mix everything together until a thick, uniform, pliable fudge paste forms. It should pull away cleanly from the sides of the bowl.
- Cover the bowl with cling film and chill in the refrigerator for a minimum of 1 hour to firm up the mixture.
- Once chilled, scoop out the fudge mixture (about 1 tablespoon per ball) and roll firmly between your palms to form neat spheres.
- Immediately roll each fudge ball generously in the prepared shredded coconut until fully coated. Press lightly so the coconut adheres well.
- Place the finished Snow Balls onto a parchment-lined baking sheet. Chill for a final 30 minutes before serving to ensure they are fully set.
