Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (45g) unsweetened cocoa powder
  • 2 cups (240g) icing sugar, sifted
  • 1 1/2 cups (150g) crushed digestive biscuits or graham crackers
  • 1/2 can (200g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup (90g) finely shredded coconut, for coating

Instructions:

  1. Spread the shredded coconut evenly onto a shallow plate or tray. Set aside.
  2. Gently melt the butter in a saucepan over low heat or in short bursts in the microwave. Do not let it brown. Remove from heat.
  3. In a large mixing bowl, combine the sifted icing sugar, crushed biscuits, and cocoa powder. Whisk briefly to ensure even distribution.
  4. Pour the melted butter, condensed milk, and vanilla extract into the dry mixture.
  5. Use a sturdy spatula to mix everything together until a thick, uniform, pliable fudge paste forms. It should pull away cleanly from the sides of the bowl.
  6. Cover the bowl with cling film and chill in the refrigerator for a minimum of 1 hour to firm up the mixture.
  7. Once chilled, scoop out the fudge mixture (about 1 tablespoon per ball) and roll firmly between your palms to form neat spheres.
  8. Immediately roll each fudge ball generously in the prepared shredded coconut until fully coated. Press lightly so the coconut adheres well.
  9. Place the finished Snow Balls onto a parchment-lined baking sheet. Chill for a final 30 minutes before serving to ensure they are fully set.
