Ingredients:
- 6 tablespoons (85g) unsalted butter
- 1 cup (200g) granulated sugar
- 3 tablespoons (45ml) milk
- 1 teaspoon (5ml) vanilla extract
- 1/2 cup (120g) creamy peanut butter
- 6 cups (170g) Special K cereal
- 1 cup (170g) semi-sweet chocolate chips
- 1 cup (225g) butterscotch chips
Instructions:
- Grease a 9x13 inch baking pan.
- In a large saucepan, melt butter over medium heat. Stir in sugar and milk. Bring to a boil, stirring constantly. Boil for 1 minute.
- Remove the saucepan from the heat. Stir in vanilla extract and peanut butter until smooth.
- Gently fold in the Special K cereal until evenly coated.
- Press the mixture evenly into the prepared baking pan.
- In a microwave-safe bowl (or double boiler), melt chocolate chips and butterscotch chips together, stirring every 30 seconds until smooth.
- Spread the melted chocolate mixture evenly over the cereal mixture.
- Refrigerate for at least 30 minutes, or until the chocolate is set.
- Cut into bars and serve.
