Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 4 cups fresh spinach leaves, packed
  • 1 medium bell pepper, diced
  • 1 avocado, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste

Instructions:

  1. Combine rinsed quinoa and water in a medium saucepan.
  2. Bring to a boil, then reduce heat and cover.
  3. Simmer for 15 minutes until water is absorbed. Fluff with a fork.
  4. While the quinoa cooks, chop the spinach, bell pepper, avocado, cherry tomatoes, and red onion.
  5. In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  6. In a large mixing bowl, combine cooked quinoa, spinach, bell pepper, avocado, cherry tomatoes, and red onion.
  7. Drizzle with dressing and gently toss until well combined.
  8. Adjust seasoning if necessary and serve immediately or chill until ready to serve.
