Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 4 cups fresh spinach leaves, packed
- 1 medium bell pepper, diced
- 1 avocado, diced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- ¼ cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
Instructions:
- Combine rinsed quinoa and water in a medium saucepan.
- Bring to a boil, then reduce heat and cover.
- Simmer for 15 minutes until water is absorbed. Fluff with a fork.
- While the quinoa cooks, chop the spinach, bell pepper, avocado, cherry tomatoes, and red onion.
- In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
- In a large mixing bowl, combine cooked quinoa, spinach, bell pepper, avocado, cherry tomatoes, and red onion.
- Drizzle with dressing and gently toss until well combined.
- Adjust seasoning if necessary and serve immediately or chill until ready to serve.
