Ingredients:

  • 4 ears of corn, in husks
  • 2 tablespoons unsalted butter, softened
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Chili flakes, grated Parmesan cheese, fresh herbs, lime wedges

Instructions:

  1. Preheat oven to 375°F (190°C). Gently pull back the husks of the corn, but don't remove them completely from the base. Remove the silks from each ear.
  2. Spread softened butter evenly over the corn kernels. Season with salt and pepper.
  3. Pull the husks back up around the corn, securing them as best you can. This creates a natural steaming pouch.
  4. Place the corn on the baking sheet and bake for 30-40 minutes, or until the kernels are tender and slightly browned. Turn the corn halfway through for even cooking. Husks will be browned and dry.
  5. Carefully remove the corn from the oven. Let cool slightly before serving. Pull back the husks and enjoy with your favourite toppings.
