Ingredients:
- 4 ears of corn, in husks
- 2 tablespoons unsalted butter, softened
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Chili flakes, grated Parmesan cheese, fresh herbs, lime wedges
Instructions:
- Preheat oven to 375°F (190°C). Gently pull back the husks of the corn, but don't remove them completely from the base. Remove the silks from each ear.
- Spread softened butter evenly over the corn kernels. Season with salt and pepper.
- Pull the husks back up around the corn, securing them as best you can. This creates a natural steaming pouch.
- Place the corn on the baking sheet and bake for 30-40 minutes, or until the kernels are tender and slightly browned. Turn the corn halfway through for even cooking. Husks will be browned and dry.
- Carefully remove the corn from the oven. Let cool slightly before serving. Pull back the husks and enjoy with your favourite toppings.
