Ingredients:

  • 12 large jalapeño peppers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons finely chopped cilantro
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • Optional: Hot sauce

Instructions:

  1. Wearing gloves, halve jalapeños lengthwise and remove seeds/membranes. Rinse and pat dry.
  2. In a bowl, combine cream cheese, cheddar, Parmesan, cilantro, garlic powder, onion powder, hot sauce (if using), salt, and pepper. Mix well.
  3. Spoon cheese mixture into each jalapeño half.
  4. Combine panko breadcrumbs and olive oil. Toss to coat.
  5. Sprinkle breadcrumb mixture over stuffed jalapeños, pressing lightly.
  6. Preheat oven to 400°F (200°C). Bake on a prepared baking sheet for 20-25 minutes, until golden brown and tender.
  7. Cool slightly before serving.
