Ingredients:
- 12 large jalapeño peppers
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons finely chopped cilantro
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 2 tablespoons olive oil
- Optional: Hot sauce
Instructions:
- Wearing gloves, halve jalapeños lengthwise and remove seeds/membranes. Rinse and pat dry.
- In a bowl, combine cream cheese, cheddar, Parmesan, cilantro, garlic powder, onion powder, hot sauce (if using), salt, and pepper. Mix well.
- Spoon cheese mixture into each jalapeño half.
- Combine panko breadcrumbs and olive oil. Toss to coat.
- Sprinkle breadcrumb mixture over stuffed jalapeños, pressing lightly.
- Preheat oven to 400°F (200°C). Bake on a prepared baking sheet for 20-25 minutes, until golden brown and tender.
- Cool slightly before serving.
