Ingredients:

  • 4 cups (600g) fresh or frozen mulberries
  • 1/4 cup (60ml) fresh lemon juice
  • 1/4 tsp (1.5g) sea salt
  • 1/3 cup (80ml) pure maple syrup

Instructions:

  1. Combine the mulberries, maple syrup, lemon juice, and sea salt in a blender. Pulse until the mixture is completely smooth.
  2. Pour the mixture into a shallow baking dish, ensuring it is spread evenly to a depth of about 1 inch. Place in the freezer for approximately 90 minutes until the edges begin to set.
  3. Remove the dish and use a fork to vigorously scrape the frozen edges toward the center, breaking up any solid ice sheets.
  4. Return to the freezer and repeat the scraping process every 30 to 60 minutes for the next 3-4 hours until the mixture consists of coarse, glistening crystals.
