Ingredients:

  • 4 (6 oz) salmon fillets, center-cut
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup panko breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp fresh parsley, finely minced
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter, melted

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Pat the salmon fillets bone-dry with paper towels to ensure a crispy crust and prevent steaming.
  3. Brush the tops of the salmon fillets with olive oil and season evenly with salt and black pepper.
  4. In a small mixing bowl, combine panko breadcrumbs, grated Parmesan, minced parsley, dried oregano, and garlic powder.
  5. Drizzle the melted butter over the breadcrumb mixture and toss until the crumbs are evenly coated and clump slightly.
  6. Press the herb-parmesan mixture firmly onto the top of each salmon fillet to create a thick structural layer.
  7. Bake for 12 minutes or until the crust is golden brown and the internal temperature of the salmon reaches 145°F.
