Ingredients:
- 4 (6 oz) salmon fillets, center-cut
- 1 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/2 cup panko breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 1 tbsp fresh parsley, finely minced
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 2 tbsp unsalted butter, melted
Instructions:
- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper or a silicone mat.
- Pat the salmon fillets bone-dry with paper towels to ensure a crispy crust and prevent steaming.
- Brush the tops of the salmon fillets with olive oil and season evenly with salt and black pepper.
- In a small mixing bowl, combine panko breadcrumbs, grated Parmesan, minced parsley, dried oregano, and garlic powder.
- Drizzle the melted butter over the breadcrumb mixture and toss until the crumbs are evenly coated and clump slightly.
- Press the herb-parmesan mixture firmly onto the top of each salmon fillet to create a thick structural layer.
- Bake for 12 minutes or until the crust is golden brown and the internal temperature of the salmon reaches 145°F.
