Ingredients:
- 3 cups (450g) fresh strawberries, hulled and quartered
- 3 cups (450g) fresh blueberries
- 2 cups (280g) peeled and diced jicama or crisp apple
- 1 cup (240g) plain Greek yogurt
- ½ cup (115g) light whipped topping
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (15ml) honey or maple syrup
- 2 tbsp (30ml) fresh lemon juice
- 1 tsp (2g) lemon zest
Instructions:
- Wash all berries thoroughly and pat them dry with a paper towel to prevent the dressing from becoming diluted.
- Dice strawberries and jicama or apple into uniform, bite-sized pieces.
- In a large bowl, toss the prepared fruit with the fresh lemon juice and lemon zest to coat and prevent browning.
- In a medium bowl, combine the Greek yogurt, light whipped topping, vanilla extract, and honey. Whisk gently until the mixture is smooth and velvety.
- Pour the creamy dressing over the prepared fruit.
- Using a silicone spatula, gently fold the berries and white fruit into the cream until evenly coated, being careful not to crush the strawberries.
