Ingredients:

  • 3 cups (450g) fresh strawberries, hulled and quartered
  • 3 cups (450g) fresh blueberries
  • 2 cups (280g) peeled and diced jicama or crisp apple
  • 1 cup (240g) plain Greek yogurt
  • ½ cup (115g) light whipped topping
  • 1 tsp (5ml) pure vanilla extract
  • 1 tbsp (15ml) honey or maple syrup
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tsp (2g) lemon zest

Instructions:

  1. Wash all berries thoroughly and pat them dry with a paper towel to prevent the dressing from becoming diluted.
  2. Dice strawberries and jicama or apple into uniform, bite-sized pieces.
  3. In a large bowl, toss the prepared fruit with the fresh lemon juice and lemon zest to coat and prevent browning.
  4. In a medium bowl, combine the Greek yogurt, light whipped topping, vanilla extract, and honey. Whisk gently until the mixture is smooth and velvety.
  5. Pour the creamy dressing over the prepared fruit.
  6. Using a silicone spatula, gently fold the berries and white fruit into the cream until evenly coated, being careful not to crush the strawberries.
