Ingredients:

  • 12 large chocolate chip cookies (approx. 6 oz / 170g)
  • 1 pint (473ml) vanilla ice cream
  • 4 oz (113g) semi-sweet baking chocolate, chopped
  • 2 tbsp (30ml) coconut oil
  • 1/4 cup (30g) red, white, and blue patriotic sprinkles

Instructions:

  1. Line a baking sheet with parchment paper. Place the chocolate chip cookies in the freezer for 20 minutes to create a thermal barrier.
  2. Lay 6 chilled cookies on the parchment paper.
  3. Place one generous, round scoop of slightly softened vanilla ice cream in the center of each cookie. Note: Let the ice cream sit on the counter for 2 minutes first.
  4. Gently press a second cookie on top of the ice cream, pushing down until the ice cream reaches the edges of the cookie.
  5. Transfer the tray to the freezer for at least 1 hour until the sandwiches are firm to the touch.
  6. Melt the chopped semi sweet chocolate and coconut oil in a microwave safe bowl in 30 second bursts, stirring until glossy.
  7. Dip each frozen sandwich halfway into the melted chocolate.
  8. Immediately press the chocolate covered side into the patriotic sprinkles before it sets.
  9. Return the sandwiches to the freezer for 15 minutes until the chocolate shell is hard and snappy.
