Ingredients:
- 12 large chocolate chip cookies (approx. 6 oz / 170g)
- 1 pint (473ml) vanilla ice cream
- 4 oz (113g) semi-sweet baking chocolate, chopped
- 2 tbsp (30ml) coconut oil
- 1/4 cup (30g) red, white, and blue patriotic sprinkles
Instructions:
- Line a baking sheet with parchment paper. Place the chocolate chip cookies in the freezer for 20 minutes to create a thermal barrier.
- Lay 6 chilled cookies on the parchment paper.
- Place one generous, round scoop of slightly softened vanilla ice cream in the center of each cookie. Note: Let the ice cream sit on the counter for 2 minutes first.
- Gently press a second cookie on top of the ice cream, pushing down until the ice cream reaches the edges of the cookie.
- Transfer the tray to the freezer for at least 1 hour until the sandwiches are firm to the touch.
- Melt the chopped semi sweet chocolate and coconut oil in a microwave safe bowl in 30 second bursts, stirring until glossy.
- Dip each frozen sandwich halfway into the melted chocolate.
- Immediately press the chocolate covered side into the patriotic sprinkles before it sets.
- Return the sandwiches to the freezer for 15 minutes until the chocolate shell is hard and snappy.
