Ingredients:

  • 1 pound (450g) breakfast sausage, crumbled
  • 8 large eggs
  • 2 cups (480ml) milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 6 cups (about 200g) diced day-old bread (preferably white or sourdough)
  • 2 cups (200g) shredded cheddar cheese
  • ½ cup (60g) finely chopped onion
  • ½ cup (60g) finely chopped bell pepper (optional)

Instructions:

  1. Sauté crumbled sausage in a large skillet over medium heat until browned. Drain excess grease.
  2. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  3. In a large bowl, mix the cooked sausage, bread, cheese, onion, and bell pepper (if using). Pour the egg mixture over the bread mixture and stir until everything is evenly coated.
  4. Transfer the mixture to a greased baking dish, cover with plastic wrap or foil, and refrigerate for 30 minutes to allow the bread to absorb the liquid.
  5. Preheat the oven to 350°F (175°C). Remove the cover from the baking dish and bake for 45 minutes or until the casserole is puffed and golden brown.
  6. Allow to cool for a few minutes before slicing and serving.
