Ingredients:
- 1 cup (2 sticks/226g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 cup (240g) creamy peanut butter (like Skippy or Jif, not natural), softened
- 2-4 tablespoons (30-60ml) milk or heavy cream
- 1 teaspoon (5ml) vanilla extract
- Pinch of salt
Instructions:
- In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
- Add the softened peanut butter to the butter and beat until well combined and smooth.
- Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until incorporated.
- Add 2 tablespoons of milk (or cream) and the vanilla extract. Beat until smooth and creamy. Add more milk, one tablespoon at a time, until the desired consistency is reached.
- Add a pinch of salt, this will help bring out the peanut butter flavour and balance the sweetness.
- Taste the frosting and adjust sweetness, peanut butter flavor, or consistency as needed.
- Use immediately or store in an airtight container in the refrigerator for up to 3 days. Let it come to room temperature and re-whip before using.
