Ingredients:

  • 1 cup (2 sticks/226g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 cup (240g) creamy peanut butter (like Skippy or Jif, not natural), softened
  • 2-4 tablespoons (30-60ml) milk or heavy cream
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions:

  1. In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
  2. Add the softened peanut butter to the butter and beat until well combined and smooth.
  3. Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until incorporated.
  4. Add 2 tablespoons of milk (or cream) and the vanilla extract. Beat until smooth and creamy. Add more milk, one tablespoon at a time, until the desired consistency is reached.
  5. Add a pinch of salt, this will help bring out the peanut butter flavour and balance the sweetness.
  6. Taste the frosting and adjust sweetness, peanut butter flavor, or consistency as needed.
  7. Use immediately or store in an airtight container in the refrigerator for up to 3 days. Let it come to room temperature and re-whip before using.
