Ingredients:
- 1 pound (450g) fresh green beans, trimmed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: Red pepper flakes
Instructions:
- Fill a large bowl with ice water.
- Bring a large pot of salted water to a rolling boil. Add the green beans and cook for 3-4 minutes, until bright green and tender-crisp.
- Immediately transfer the green beans to the ice water bath. Let them cool for a minute or two.
- Drain the green beans well using a colander. Pat them dry with paper towels.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds, until fragrant.
- Add the blanched green beans to the skillet. Toss to coat with the garlic-infused oil. Season with salt, pepper, and red pepper flakes (if using).
- Stir in the lemon juice and cook for another minute, until the beans are heated through.
- Serve hot and enjoy!
