Ingredients:

  • 1 pound (450g) fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: Red pepper flakes

Instructions:

  1. Fill a large bowl with ice water.
  2. Bring a large pot of salted water to a rolling boil. Add the green beans and cook for 3-4 minutes, until bright green and tender-crisp.
  3. Immediately transfer the green beans to the ice water bath. Let them cool for a minute or two.
  4. Drain the green beans well using a colander. Pat them dry with paper towels.
  5. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds, until fragrant.
  6. Add the blanched green beans to the skillet. Toss to coat with the garlic-infused oil. Season with salt, pepper, and red pepper flakes (if using).
  7. Stir in the lemon juice and cook for another minute, until the beans are heated through.
  8. Serve hot and enjoy!
