Ingredients:
- 4 tablespoons (57g) unsalted butter, plus extra for greasing the pan
- 10 ounces (283g) marshmallows, preferably mini marshmallows (easier to melt)
- 1 teaspoon (5ml) vanilla extract
- 6 cups (142g) Rice Krispies cereal
- Pinch of salt
Instructions:
- Grease the 9x13 inch baking pan with butter. This is crucial; nobody wants a sticky situation!
- In a large saucepan over low heat, melt the butter. Don't let it brown!
- Add the marshmallows to the melted butter and stir constantly until completely melted and smooth. This is where the magic happens.
- Remove the saucepan from the heat and stir in the vanilla extract and salt. This adds depth of flavour.
- Add the Rice Krispies cereal and gently fold until evenly coated with the marshmallow mixture. Make sure every little Krispie is happy.
- Transfer the mixture to the prepared baking pan and gently press it down evenly. Don't compact it too much; you want to keep the treats light and airy.
- Let the treats cool and set for at least 30 minutes before cutting into squares. This makes them easier to handle.
- Cut into 12 squares and serve. Or, you know, just dig in!
