Ingredients:

  • 4 tablespoons (57g) unsalted butter, plus extra for greasing the pan
  • 10 ounces (283g) marshmallows, preferably mini marshmallows (easier to melt)
  • 1 teaspoon (5ml) vanilla extract
  • 6 cups (142g) Rice Krispies cereal
  • Pinch of salt

Instructions:

  1. Grease the 9x13 inch baking pan with butter. This is crucial; nobody wants a sticky situation!
  2. In a large saucepan over low heat, melt the butter. Don't let it brown!
  3. Add the marshmallows to the melted butter and stir constantly until completely melted and smooth. This is where the magic happens.
  4. Remove the saucepan from the heat and stir in the vanilla extract and salt. This adds depth of flavour.
  5. Add the Rice Krispies cereal and gently fold until evenly coated with the marshmallow mixture. Make sure every little Krispie is happy.
  6. Transfer the mixture to the prepared baking pan and gently press it down evenly. Don't compact it too much; you want to keep the treats light and airy.
  7. Let the treats cool and set for at least 30 minutes before cutting into squares. This makes them easier to handle.
  8. Cut into 12 squares and serve. Or, you know, just dig in!
