Ingredients:

  • 4 tablespoons (56g) unsalted butter, plus extra for greasing the pan
  • 10 ounces (283g) marshmallows, preferably mini marshmallows
  • 6 cups (170g) Rice Krispies cereal
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Thoroughly grease a 9x13 inch baking pan with butter.
  2. In a large saucepan over low heat, melt the butter.
  3. Add the marshmallows to the melted butter and stir constantly until completely melted and smooth.
  4. Stir in the vanilla extract, if using.
  5. Remove from heat. Add the Rice Krispies cereal and salt. Gently fold until the cereal is evenly coated with the marshmallow mixture.
  6. Immediately press the mixture evenly into the prepared pan. Use a buttered spatula or your buttered hands (carefully, it's hot!) to avoid sticking.
  7. Let the treats cool and set for at least 30 minutes before cutting into squares.
