Ingredients:
- 4 tablespoons (56g) unsalted butter, plus extra for greasing the pan
- 10 ounces (283g) marshmallows, preferably mini marshmallows
- 6 cups (170g) Rice Krispies cereal
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract (optional)
Instructions:
- Thoroughly grease a 9x13 inch baking pan with butter.
- In a large saucepan over low heat, melt the butter.
- Add the marshmallows to the melted butter and stir constantly until completely melted and smooth.
- Stir in the vanilla extract, if using.
- Remove from heat. Add the Rice Krispies cereal and salt. Gently fold until the cereal is evenly coated with the marshmallow mixture.
- Immediately press the mixture evenly into the prepared pan. Use a buttered spatula or your buttered hands (carefully, it's hot!) to avoid sticking.
- Let the treats cool and set for at least 30 minutes before cutting into squares.
