  • 4 tablespoons (56g) unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, combine all dry ingredients: all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract until well combined.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid over-mixing.
  4. Preheat the skillet or griddle over medium heat and lightly grease with oil or butter.
  5. Use a ladle to pour batter onto the skillet, forming pancakes of your desired size.
  6. Cook until bubbles form on the surface, then flip and continue cooking until golden brown, about 2-3 minutes per side.
