Ingredients:
- 1 pound (454g) raw, blanched almonds
- 1-2 tablespoons (15-30ml) olive oil or melted coconut oil
- 1/2 teaspoon (2.5ml) sea salt, or to taste
- Optional Flavor Variations:
- Sweet & Spicy: 1 tablespoon (15ml) maple syrup or honey, 1/2 teaspoon (2.5ml) chili powder, 1/4 teaspoon (1.25ml) cinnamon, pinch of cayenne pepper (optional)
- Cinnamon Sugar: 2 tablespoons (30ml) granulated sugar, 1 teaspoon (5ml) cinnamon
- Rosemary Garlic: 2 cloves garlic, minced, 1 tablespoon (15ml) fresh rosemary, chopped, 1/4 teaspoon (1.25ml) black pepper
- Smoked Paprika: 1 tablespoon (15ml) smoked paprika, 1/4 teaspoon (1.25ml) garlic powder, 1/4 teaspoon (1.25ml) onion powder
- Everything Bagel: 1 tablespoon (15ml) Everything Bagel seasoning
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, toss almonds with olive oil or coconut oil and salt until evenly coated.
- Select your desired flavor variation. In a small bowl, combine the ingredients for your chosen flavor.
- Add the flavor mixture to the bowl with the almonds. Toss until the almonds are evenly coated.
- Spread the almonds in a single layer on a baking sheet lined with parchment paper (if using).
- Roast for 15-20 minutes, stirring halfway through, until golden brown and fragrant. Watch closely to prevent burning!
- Remove from oven and let cool completely on the baking sheet. The almonds will crisp up as they cool.
- Store in an airtight container at room temperature. Enjoy your roasted almonds!
