Instructions:
- If using wooden skewers, soak them in water for at least 30 minutes prior to assembly to prevent burning.
- In a large mixing bowl, whisk together the pesto, olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper until well combined to create the marinade.
- Add the cleaned shrimp (and optional onion/tomato chunks) to the pesto mixture. Toss gently to coat everything thoroughly. Cover the bowl and refrigerate to marinate for a minimum of 30 minutes, but no more than 2 hours.
- Preheat your grill (Gas or Charcoal) to medium-high heat (approximately 400°F / 200°C). Lightly oil the grill grates to prevent the shrimp from sticking.
- Thread the marinated shrimp onto the soaked skewers, alternating with chunks of onion or tomatoes if desired. Do not pack them too tightly.
- Place the skewers directly over the heat. Grill for approximately 3–4 minutes per side until the shrimp curl into a 'C' shape and turn opaque pink throughout.
- Remove the Grilled Pesto Shrimp Skewers from the grill, let them rest for 2 minutes, and serve immediately with fresh lemon wedges.
