  1. If using wooden skewers, soak them in water for at least 30 minutes prior to assembly to prevent burning.
  2. In a large mixing bowl, whisk together the pesto, olive oil, lemon juice, lemon zest, minced garlic, salt, and pepper until well combined to create the marinade.
  3. Add the cleaned shrimp (and optional onion/tomato chunks) to the pesto mixture. Toss gently to coat everything thoroughly. Cover the bowl and refrigerate to marinate for a minimum of 30 minutes, but no more than 2 hours.
  4. Preheat your grill (Gas or Charcoal) to medium-high heat (approximately 400°F / 200°C). Lightly oil the grill grates to prevent the shrimp from sticking.
  5. Thread the marinated shrimp onto the soaked skewers, alternating with chunks of onion or tomatoes if desired. Do not pack them too tightly.
  6. Place the skewers directly over the heat. Grill for approximately 3–4 minutes per side until the shrimp curl into a 'C' shape and turn opaque pink throughout.
  7. Remove the Grilled Pesto Shrimp Skewers from the grill, let them rest for 2 minutes, and serve immediately with fresh lemon wedges.
