Ingredients:
- 2 oz London Dry Gin
- 0.75 oz Elderflower Liqueur
- 0.5 oz Freshly squeezed lemon juice, strained
- 0.5 oz Lavender-infused honey syrup (prepared with 1 part honey, 1 part hot water, and culinary lavender)
- 3 oz Chilled Prosecco
- 1 oz Premium soda water
- 1 fresh sprig of thyme or mint
- 3 edible viola or pansy petals
- 1 dehydrated lemon wheel
Instructions:
- Prepare the lavender honey syrup by combining 1 part hot water with 1 part honey and a tablespoon of culinary lavender. Let it steep for 5 minutes to release floral oils.
- Add 2 oz gin, 0.75 oz elderflower liqueur, 0.5 oz lemon juice, and 0.5 oz of the prepared lavender honey syrup to a cocktail shaker filled with ice.
- Execute a 'flash-shake' for approximately 10-15 seconds to chill the ingredients and further bruise the botanicals through kinetic energy.
- Fine strain the mixture through a mesh strainer into a chilled coupe or wine glass to remove any lavender sediment or ice shards.
- Top the glass with 3 oz of chilled Prosecco and 1 oz of soda water. Stir gently with a bar spoon to integrate without losing carbonation.
- Garnish with a fresh sprig of thyme, edible petals, and a dehydrated lemon wheel.
