Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1 1/2 cups (190g) all-purpose flour
- 1 tbsp (8g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (2.5g) baking powder
- 1 tbsp (6g) pumpkin pie spice
- 1/2 tsp (3g) salt
- 1 can (15 oz / 425g) pumpkin puree
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1/4 cup (60ml) vegetable oil
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
Instructions:
- In a medium bowl, cream together the softened butter and brown sugar until gritty but combined.
- Stir in the flour, cinnamon, and salt until the mixture resembles coarse wet sand.
- Set aside the crumb topping in the refrigerator to keep the butter cold.
- Whisk the flour, baking soda, baking powder, pumpkin pie spice, and salt in a bowl.
- In a separate larger bowl, beat the pumpkin puree, sugar, eggs, oil, and vanilla until the batter is a smooth, bright orange.
- Gradually fold the dry ingredients into the wet until just combined; do not overmix.
- Pour half of the pumpkin batter into the greased 9x9 inch baking pan and smooth the top.
- Beat the softened cream cheese, sugar, egg, and vanilla until velvety smooth. Spread this evenly over the first pumpkin layer.
- Top with the remaining pumpkin batter.
- Sprinkle the chilled crumb topping generously over the top.
- Bake at 350°F (175°C) for 35–40 minutes until the edges are pulling away from the pan.
