Ingredients:
- 1.5 cups (190g) whole wheat pastry flour
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1 tbsp (6g) pumpkin pie spice
- 0.5 cup (115g) unsalted butter, softened
- 0.75 cup (150g) coconut sugar
- 2 large (110g) eggs
- 1 cup (245g) pumpkin purée
- 0.25 cup (60g) plain Greek yogurt
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) low-fat cream cheese, softened
- 0.25 cup (50g) honey
- 1 large egg yolk
- 1 tsp (5ml) vanilla extract
- 1 tsp (3g) cornstarch
Instructions:
- In a medium bowl, whisk together the whole wheat pastry flour, baking soda, salt, and pumpkin pie spice. Set aside.
- In a large bowl, beat the softened unsalted butter and coconut sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the pumpkin purée, Greek yogurt, and vanilla extract until the batter is smooth.
- Gently fold the dry ingredients into the wet batter using a spatula just until no flour streaks remain.
- In a separate bowl, beat the softened low-fat cream cheese, honey, egg yolk, vanilla extract, and cornstarch until velvety and lump-free.
- Pour approximately two-thirds of the pumpkin batter into a greased and floured Bundt pan or 9x13 sheet pan.
- Layer the cream cheese mixture over the pumpkin batter, then top with the remaining pumpkin batter.
- Use a thin paring knife or skewer to create a figure-eight motion through the layers to create high-contrast swirls.
- Bake for 45 minutes or until a toothpick inserted into the center comes out clean. Cool on a wire rack before serving.
