Ingredients:

  • 4 large tilapia fillets (approx. 6 oz / 170g each)
  • 1 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter, melted
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/8 tsp cayenne pepper
  • 1 fresh lemon, sliced into rounds
  • 2 tbsp fresh parsley, finely minced

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. Use paper towels to pat both sides of the tilapia fillets until they are bone-dry and tacky to the touch.
  3. In a small mixing bowl, whisk together the melted butter and olive oil.
  4. In a separate ramekin, combine the smoked paprika, garlic powder, dried oregano, sea salt, black pepper, and cayenne pepper.
  5. Brush the fillets generously with the butter and oil mixture, then sprinkle the dry spice rub evenly over the top of each fillet.
  6. Arrange the fillets on the prepared baking sheet, ensuring they do not touch to allow for proper heat circulation. Bake for 10 minutes or until the fish flakes easily with a fork.
  7. Garnish with fresh lemon rounds and minced parsley before serving.
