Ingredients:
- 4 large tilapia fillets (approx. 6 oz / 170g each)
- 1 tbsp extra virgin olive oil
- 1 tbsp unsalted butter, melted
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/8 tsp cayenne pepper
- 1 fresh lemon, sliced into rounds
- 2 tbsp fresh parsley, finely minced
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper or a silicone mat.
- Use paper towels to pat both sides of the tilapia fillets until they are bone-dry and tacky to the touch.
- In a small mixing bowl, whisk together the melted butter and olive oil.
- In a separate ramekin, combine the smoked paprika, garlic powder, dried oregano, sea salt, black pepper, and cayenne pepper.
- Brush the fillets generously with the butter and oil mixture, then sprinkle the dry spice rub evenly over the top of each fillet.
- Arrange the fillets on the prepared baking sheet, ensuring they do not touch to allow for proper heat circulation. Bake for 10 minutes or until the fish flakes easily with a fork.
- Garnish with fresh lemon rounds and minced parsley before serving.
