Ingredients:

  • 4 cold-water lobster tails (approx. 170g / 6oz each)
  • 1/2 tsp (3g) Sea salt
  • 1/4 tsp (1g) Sweet smoked paprika
  • 4 tbsp (56g) Unsalted butter, melted
  • 2 cloves (10g) Garlic, finely minced
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 tsp (2g) Fresh parsley, finely chopped
  • 1/2 tsp (1g) Fresh chives, minced

Instructions:

  1. Using sharp kitchen shears, cut down the center of the top shell toward the tail, stopping just before the tail fin. Gently pry the shell open and lift the meat upward, squeezing the shell halves back together underneath so the meat rests on top while remaining attached at the base.
  2. Place tails on a baking sheet. Whisk melted butter, minced garlic, lemon juice, and herbs in a small bowl. Brush the mixture generously over the lobster meat, then dust with sea salt and smoked paprika.
  3. Preheat broiler to High with the rack 5–6 inches from the heat. Broil for approximately 1 minute per ounce (about 6-8 minutes). Remove once the meat is opaque and white and the internal temperature reaches 140°F (60°C).
  4. Immediately brush with any remaining garlic butter or pan drippings. Serve hot with additional lemon wedges.
