Ingredients:

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • 4 large flour tortillas
  • Cooking spray or extra olive oil, for frying

Instructions:

  1. In a mixing bowl, combine shredded chicken, cheddar cheese, mozzarella cheese, diced bell pepper, diced onion, and taco seasoning. Mix well until all ingredients are evenly coated.
  2. Heat olive oil in a large skillet over medium heat. Place one tortilla in the skillet and evenly spread 1/4 of the filling mixture over half of the tortilla. Fold the tortilla over to cover the filling.
  3. Cook for about 3-4 minutes until the bottom is golden brown. Flip using a spatula and cook the other side for another 3-4 minutes until cheese is melted and tortilla is crisp. Repeat with remaining tortillas and filling.
  4. Remove quesadillas from the skillet, let rest for 1-2 minutes, then cut into wedges. Serve warm with salsa or guacamole.
