Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold and cubed
  • 1/4 cup (60ml) cold water
  • 4 medium-sized apples, peeled, cored, and quartered (about 4 cups)
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 cup (240ml) water
  • 1 cup (200g) brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon

Instructions:

  1. Combine flour and salt in a bowl.
  2. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in cold water, mixing until the dough forms. Chill the dough for 10-15 minutes.
  4. In a separate bowl, toss apple quarters with sugar, cinnamon, nutmeg (if using), and lemon juice.
  5. Roll out chilled dough on a floured surface into a rectangular shape. Cut into squares large enough to envelop the apple quarters.
  6. Place an apple quarter in the centre of each square, fold over, and seal edges.
  7. In a saucepan, combine water, brown sugar, vanilla, and cinnamon over medium heat until dissolved.
  8. Preheat the oven to 350°F (175°C) and arrange filled dumplings in a baking dish. Pour the syrup over them.
  9. Bake for 25-30 minutes or until dumplings are golden brown.
  10. Let cool for a few minutes and serve warm with a scoop of vanilla ice cream if desired.
