Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (113g) unsalted butter, cold and cubed
- 1/4 cup (60ml) cold water
- 4 medium-sized apples, peeled, cored, and quartered (about 4 cups)
- 1/4 cup (50g) granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg (optional)
- 1 tablespoon lemon juice
- 1 cup (240ml) water
- 1 cup (200g) brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
Instructions:
- Combine flour and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Stir in cold water, mixing until the dough forms. Chill the dough for 10-15 minutes.
- In a separate bowl, toss apple quarters with sugar, cinnamon, nutmeg (if using), and lemon juice.
- Roll out chilled dough on a floured surface into a rectangular shape. Cut into squares large enough to envelop the apple quarters.
- Place an apple quarter in the centre of each square, fold over, and seal edges.
- In a saucepan, combine water, brown sugar, vanilla, and cinnamon over medium heat until dissolved.
- Preheat the oven to 350°F (175°C) and arrange filled dumplings in a baking dish. Pour the syrup over them.
- Bake for 25-30 minutes or until dumplings are golden brown.
- Let cool for a few minutes and serve warm with a scoop of vanilla ice cream if desired.
