Ingredients:
- 4 tablespoons pancake mix (any brand)
- 2 tablespoons milk (regular or non-dairy)
- 1 tablespoon sugar (white or brown)
- 1 tablespoon vegetable oil or melted butter
- 1/8 teaspoon vanilla extract
- Pinch of salt
- Optional: 1 tablespoon chocolate chips
- Fresh berries (for garnish)
- Whipped cream or ice cream (for serving)
Instructions:
- In the microwave-safe mug, add the pancake mix, sugar, and salt. Stir thoroughly to combine.
- Pour in the milk, vegetable oil (or melted butter), and vanilla extract. Mix until smooth and no dry lumps remain.
- If desired, fold in chocolate chips for a richer flavor.
- Place the mug in the microwave and cook on high for 1-2 minutes. Check at the 1-minute mark; the cake should be set but still moist. Do not overcook!
- Carefully remove the mug (it will be hot). Optional: Top with fresh berries, whipped cream, or a scoop of ice cream.
