Ingredients:

  • 4 tablespoons pancake mix (any brand)
  • 2 tablespoons milk (regular or non-dairy)
  • 1 tablespoon sugar (white or brown)
  • 1 tablespoon vegetable oil or melted butter
  • 1/8 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 tablespoon chocolate chips
  • Fresh berries (for garnish)
  • Whipped cream or ice cream (for serving)

Instructions:

  1. In the microwave-safe mug, add the pancake mix, sugar, and salt. Stir thoroughly to combine.
  2. Pour in the milk, vegetable oil (or melted butter), and vanilla extract. Mix until smooth and no dry lumps remain.
  3. If desired, fold in chocolate chips for a richer flavor.
  4. Place the mug in the microwave and cook on high for 1-2 minutes. Check at the 1-minute mark; the cake should be set but still moist. Do not overcook!
  5. Carefully remove the mug (it will be hot). Optional: Top with fresh berries, whipped cream, or a scoop of ice cream.
