Ingredients:
- 1 pint Strawberries (hulled, halved or quartered)
- 1 cup Blueberries
- 1 lb Seedless Green Grapes
- 1 large Star Fruit (Carambola), sliced (optional)
- 10 Wooden Skewers (6-inch/15cm)
- 8 ounces Cream Cheese (softened)
- 1/2 cup Greek Yogurt (plain, full-fat)
- 1/3 cup Powdered Sugar (Icing Sugar)
- 1 teaspoon Lemon Zest
- 1 tablespoon Fresh Lemon Juice
- 1/2 teaspoon Vanilla Extract
Instructions:
- Gently wash and thoroughly dry all fruit. Hull and slice strawberries. If using star fruit, slice thinly.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent splintering.
- In a medium bowl, beat the softened cream cheese until completely smooth.
- Add the Greek yogurt, powdered sugar, lemon zest, lemon juice, and vanilla extract to the cream cheese. Whisk vigorously until the mixture is light, fluffy, and homogenous. Taste and adjust lemon juice if needed.
- Cover the dip and chill in the refrigerator for at least 15 minutes to firm up.
- Thread the fruit onto the skewers, alternating colours (e.g., Strawberry, Grape, Blueberry) to achieve the best Red, White, and Blue visual effect.
- Arrange the finished skewers neatly on a serving platter.
- Transfer the chilled Lemony Cloud Dip to a small serving bowl and serve the fruit skewers alongside immediately.
