Ingredients:
- 1 lb (450 g) tomatillos, husked and rinsed
- 1 medium onion, chopped (about 1 cup)
- 2 cloves garlic, peeled
- 1-2 jalapeños or serrano peppers, stemmed
- 1/2 cup (120 ml) fresh cilantro, chopped
- Juice of 1 lime (about 2 tablespoons)
- Salt, to taste
- Additional cilantro (optional garnish)
- Lime wedges (optional garnish)
Instructions:
- Preheat the oven to broil.
- Husk and rinse tomatillos. Chop onion and prepare the peppers.
- Place tomatillos, onion, garlic, and peppers on a baking sheet. Optionally line with parchment for easy cleanup.
- Broil the vegetables for 10-15 minutes, turning occasionally, until charred and softened.
- Transfer roasted ingredients to a blender or food processor. Add chopped cilantro and lime juice. Blend until desired consistency is reached.
- Add salt gradually, tasting as you go.
- Allow to cool before serving or refrigerating.
