Ingredients:

  • 1 lb (450 g) tomatillos, husked and rinsed
  • 1 medium onion, chopped (about 1 cup)
  • 2 cloves garlic, peeled
  • 1-2 jalapeños or serrano peppers, stemmed
  • 1/2 cup (120 ml) fresh cilantro, chopped
  • Juice of 1 lime (about 2 tablespoons)
  • Salt, to taste
  • Additional cilantro (optional garnish)
  • Lime wedges (optional garnish)

Instructions:

  1. Preheat the oven to broil.
  2. Husk and rinse tomatillos. Chop onion and prepare the peppers.
  3. Place tomatillos, onion, garlic, and peppers on a baking sheet. Optionally line with parchment for easy cleanup.
  4. Broil the vegetables for 10-15 minutes, turning occasionally, until charred and softened.
  5. Transfer roasted ingredients to a blender or food processor. Add chopped cilantro and lime juice. Blend until desired consistency is reached.
  6. Add salt gradually, tasting as you go.
  7. Allow to cool before serving or refrigerating.
