Ingredients:

  • 3 cups (360g) powdered sugar, sifted
  • 2 large egg whites or 4 tablespoons (60ml) pasteurized liquid egg whites
  • 1/4 cup (60ml) water, plus more, 1 teaspoon at a time, if needed
  • 1 teaspoon (5ml) vanilla extract
  • Gel food coloring (optional)

Instructions:

  1. Sift the powdered sugar into a large bowl to remove any lumps.
  2. In the bowl of a stand mixer, combine the sifted powdered sugar, egg whites (or pasteurized egg whites), water, and vanilla extract.
  3. Beat on low speed until the powdered sugar is incorporated, then increase the speed to medium-high and beat for 5-7 minutes, or until the frosting is glossy and holds stiff peaks.
  4. If the frosting is too thick, add water, 1 teaspoon at a time, until it reaches your desired consistency. If it's too thin, add more sifted powdered sugar, 1 tablespoon at a time.
  5. Divide the frosting into smaller bowls if you want to make multiple colors. Add gel food coloring, one drop at a time, until you achieve your desired shade. Mix well.
  6. Transfer the frosting to piping bags fitted with tips (or use a spoon) and decorate your sugar cookies.
  7. Allow the decorated cookies to sit uncovered at room temperature for 1-4 hours, or until the frosting is completely hardened.
