Ingredients:

  • 4 medium zucchini
  • 8 oz langostino tails, thawed if frozen
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • Zest of 1 lemon
  • Juice of 1 lemon
  • ¼ cup grated Parmesan cheese

Instructions:

  1. Spiralize or julienne the zucchini to create noodles and set aside on a clean kitchen towel.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds.
  3. Add langostino and cook for 3-5 minutes until opaque and cooked through.
  4. Add zucchini noodles, toss with red pepper flakes, salt, and pepper, then sauté for another 5 minutes.
  5. Remove from heat and stir in lemon juice, lemon zest, and chopped parsley.
  6. Distribute the pasta among serving bowls and top with grated Parmesan if desired.
