Ingredients:
- 4 medium zucchini
- 8 oz langostino tails, thawed if frozen
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt to taste
- Pepper to taste
- 2 tablespoons fresh parsley, chopped
- Zest of 1 lemon
- Juice of 1 lemon
- ¼ cup grated Parmesan cheese
Instructions:
- Spiralize or julienne the zucchini to create noodles and set aside on a clean kitchen towel.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds.
- Add langostino and cook for 3-5 minutes until opaque and cooked through.
- Add zucchini noodles, toss with red pepper flakes, salt, and pepper, then sauté for another 5 minutes.
- Remove from heat and stir in lemon juice, lemon zest, and chopped parsley.
- Distribute the pasta among serving bowls and top with grated Parmesan if desired.
