Ingredients:
- 2 lbs chicken thighs (skin-on, bone-in recommended)
- 1 cup soy sauce
- 1/2 cup white vinegar
- 1 cup water
- 1/4 cup brown sugar
- 6 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon black peppercorns
- 2 tablespoons cooking oil
- Salt, to taste
- 1 teaspoon chili flakes (optional)
- Steamed white rice for serving
- Chopped green onions for garnish
Instructions:
- In a bowl, combine soy sauce, vinegar, brown sugar, minced garlic, bay leaves, and black peppercorns.
- Add chicken thighs to the marinade, covering fully. Let sit for 10 minutes.
- Heat cooking oil in a skillet over medium heat. Remove chicken from marinade and sear until browned on both sides.
- Pour the reserved marinade and water into the skillet with the chicken. Bring to a boil, reduce heat to low, cover, and simmer for 20-25 minutes.
- Taste the sauce, and add salt or chili flakes if desired. Simmer uncovered for an additional 5 minutes.
- Serve hot over steamed white rice, garnished with chopped green onions.
