Ingredients:

  • 2 lbs chicken thighs (skin-on, bone-in recommended)
  • 1 cup soy sauce
  • 1/2 cup white vinegar
  • 1 cup water
  • 1/4 cup brown sugar
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 2 tablespoons cooking oil
  • Salt, to taste
  • 1 teaspoon chili flakes (optional)
  • Steamed white rice for serving
  • Chopped green onions for garnish

Instructions:

  1. In a bowl, combine soy sauce, vinegar, brown sugar, minced garlic, bay leaves, and black peppercorns.
  2. Add chicken thighs to the marinade, covering fully. Let sit for 10 minutes.
  3. Heat cooking oil in a skillet over medium heat. Remove chicken from marinade and sear until browned on both sides.
  4. Pour the reserved marinade and water into the skillet with the chicken. Bring to a boil, reduce heat to low, cover, and simmer for 20-25 minutes.
  5. Taste the sauce, and add salt or chili flakes if desired. Simmer uncovered for an additional 5 minutes.
  6. Serve hot over steamed white rice, garnished with chopped green onions.
