Ingredients:

  • 2 pounds chuck roast, trimmed and cut into 2-inch cubes
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon chipotle powder
  • 1 cup beef broth
  • 1/4 cup apple cider vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 2 bay leaves

Instructions:

  1. Cut the chuck roast into 2-inch cubes and pat dry. Season with salt and pepper.
  2. Set the Instant Pot to Sauté mode, add vegetable oil. Once hot, add beef cubes in batches, browning on all sides. Remove and set aside.
  3. In the same pot, add diced onion and sauté until translucent (about 5 minutes). Add minced garlic, cumin, oregano, and chipotle powder; cook for another minute until fragrant.
  4. Return the browned meat to the pot. Pour in beef broth, apple cider vinegar, lime juice, and stir in brown sugar. Add bay leaves.
  5. Close the lid
  6. Remove the meat and bay leaves. Shred the meat using two forks and return it to the pot, mixing with the sauce.
  7. Serve warm as desired (in tacos, burritos, etc.).
