Ingredients:
- 2 pounds chuck roast, trimmed and cut into 2-inch cubes
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon chipotle powder
- 1 cup beef broth
- 1/4 cup apple cider vinegar
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 2 bay leaves
Instructions:
- Cut the chuck roast into 2-inch cubes and pat dry. Season with salt and pepper.
- Set the Instant Pot to Sauté mode, add vegetable oil. Once hot, add beef cubes in batches, browning on all sides. Remove and set aside.
- In the same pot, add diced onion and sauté until translucent (about 5 minutes). Add minced garlic, cumin, oregano, and chipotle powder; cook for another minute until fragrant.
- Return the browned meat to the pot. Pour in beef broth, apple cider vinegar, lime juice, and stir in brown sugar. Add bay leaves.
- Close the lid
- Remove the meat and bay leaves. Shred the meat using two forks and return it to the pot, mixing with the sauce.
- Serve warm as desired (in tacos, burritos, etc.).
