Ingredients:

  • 4 large yellow onions (about 1 lb or 450g each)
  • 3 tablespoons olive oil (45ml)
  • 2 tablespoons balsamic vinegar (30ml)
  • 1 teaspoon garlic powder (5g)
  • 1 teaspoon smoked paprika (5g)
  • 1 teaspoon dried oregano (5g)
  • ½ teaspoon salt (2g), or to taste
  • ¼ teaspoon black pepper (1g), or to taste
  • Fresh parsley, chopped (for serving)
  • Crumbled feta or vegan cheese (for topping)

Instructions:

  1. Peel and slice each onion into 1-inch thick rounds, keeping the rings intact.
  2. In a large bowl, whisk together olive oil, balsamic vinegar, garlic powder, smoked paprika, oregano, salt, and pepper.
  3. Gently toss the onion rounds in the marinade until fully coated. Let them marinate for at least 30 minutes.
  4. If grilling, preheat the grill to medium heat. If roasting, preheat your oven to 400°F (200°C).
  5. For grilling: Place the marinated onion steaks directly on the grill. Cook for about 5-6 minutes per side until caramelized and tender.
  6. For roasting: Spread marinated onions on a baking sheet and roast for 20-25 minutes, flipping halfway through.
  7. Transfer the onion steaks to a serving plate, garnish with fresh parsley and optional feta or vegan cheese.
