Ingredients:
- 4 large yellow onions (about 1 lb or 450g each)
- 3 tablespoons olive oil (45ml)
- 2 tablespoons balsamic vinegar (30ml)
- 1 teaspoon garlic powder (5g)
- 1 teaspoon smoked paprika (5g)
- 1 teaspoon dried oregano (5g)
- ½ teaspoon salt (2g), or to taste
- ¼ teaspoon black pepper (1g), or to taste
- Fresh parsley, chopped (for serving)
- Crumbled feta or vegan cheese (for topping)
Instructions:
- Peel and slice each onion into 1-inch thick rounds, keeping the rings intact.
- In a large bowl, whisk together olive oil, balsamic vinegar, garlic powder, smoked paprika, oregano, salt, and pepper.
- Gently toss the onion rounds in the marinade until fully coated. Let them marinate for at least 30 minutes.
- If grilling, preheat the grill to medium heat. If roasting, preheat your oven to 400°F (200°C).
- For grilling: Place the marinated onion steaks directly on the grill. Cook for about 5-6 minutes per side until caramelized and tender.
- For roasting: Spread marinated onions on a baking sheet and roast for 20-25 minutes, flipping halfway through.
- Transfer the onion steaks to a serving plate, garnish with fresh parsley and optional feta or vegan cheese.
