Ingredients:

  • 1/2 lb small shrimp, peeled, deveined, and chopped
  • 8 oz lump crab meat, drained
  • 1/4 cup plain non-fat Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp fresh squeezed lemon juice
  • 1 tsp low-sodium Old Bay seasoning
  • 1/2 tsp garlic powder
  • 1 tbsp finely chopped fresh parsley
  • 1/4 tsp black pepper
  • 6 biscuit halves
  • 1 cup shredded sharp cheddar cheese
  • 1 tbsp melted butter

Instructions:

  1. In a large mixing bowl, fold together the chopped shrimp, lump crab, Greek yogurt, mayonnaise, Dijon, and lemon juice.
  2. Stir in the Old Bay seasoning, garlic powder, and black pepper using a gentle folding motion to keep the crab lumps intact.
  3. Preheat oven to 400°F (200°C). Brush the cut side of each biscuit half with melted butter and place them on a parchment-lined baking sheet.
  4. Spoon a generous portion of the seafood mixture onto each biscuit half, smoothing the top with a spatula.
  5. Top each melt with a pinch of shredded cheddar cheese.
  6. Bake for 12–15 minutes until the filling is heated through.
  7. Switch to the broiler for the final 1–2 minutes until the cheese is bubbling and mahogany-colored.
  8. Garnish with fresh parsley before serving.
