Ingredients:

  • 1 English cucumber, thinly sliced (450g)
  • 1 tsp kosher salt (6g)
  • 20 slices white sandwich bread
  • 1/2 cup salted butter, softened (115g)

Instructions:

  1. Place thinly sliced cucumbers in a single layer on a baking sheet lined with paper towels. Sprinkle evenly with kosher salt and let sit for 20 minutes to extract moisture.
  2. Use fresh paper towels to firmly pat the cucumber slices dry until they are no longer slippery.
  3. Spread a generous layer of softened salted butter from edge to edge on each slice of white bread to create a waterproof seal.
  4. Layer the dried cucumber slices over one slice of buttered bread, overlapping them slightly, then top with a second slice of buttered bread.
  5. Slice off the crusts and cut the sandwiches into triangles or fingers.
