Ingredients:
- 2 cups (400g) granulated sugar
- ½ cup (113g / 1 stick) unsalted butter, cut into pieces
- ½ cup (120 ml) milk
- ¼ cup (21g) unsweetened cocoa powder
- ½ teaspoon (2.5ml) salt
- 1 teaspoon (5ml) vanilla extract
- ½ cup (128g) creamy peanut butter (optional)
- 3 cups (240g) quick-cooking oats (not instant)
Instructions:
- In a large saucepan, combine sugar, butter, milk, cocoa powder, and salt.
- Bring the mixture to a rolling boil over medium heat, stirring constantly.
- Once boiling, reduce heat slightly to maintain a rolling boil and cook for exactly 1 minute, stirring continuously.
- Remove the saucepan from the heat. Stir in the vanilla extract and peanut butter (if using) until completely smooth.
- Add the quick-cooking oats to the mixture and stir until everything is well coated.
- Drop by rounded tablespoons onto prepared baking sheets.
- Let the no bake oatmeal cookies cool completely, then chill in the refrigerator for at least 30 minutes.
- Once set, peel the cookies off the parchment paper and enjoy!
