Ingredients:

  • 2 cups (400g) granulated sugar
  • ½ cup (113g / 1 stick) unsalted butter, cut into pieces
  • ½ cup (120 ml) milk
  • ¼ cup (21g) unsweetened cocoa powder
  • ½ teaspoon (2.5ml) salt
  • 1 teaspoon (5ml) vanilla extract
  • ½ cup (128g) creamy peanut butter (optional)
  • 3 cups (240g) quick-cooking oats (not instant)

Instructions:

  1. In a large saucepan, combine sugar, butter, milk, cocoa powder, and salt.
  2. Bring the mixture to a rolling boil over medium heat, stirring constantly.
  3. Once boiling, reduce heat slightly to maintain a rolling boil and cook for exactly 1 minute, stirring continuously.
  4. Remove the saucepan from the heat. Stir in the vanilla extract and peanut butter (if using) until completely smooth.
  5. Add the quick-cooking oats to the mixture and stir until everything is well coated.
  6. Drop by rounded tablespoons onto prepared baking sheets.
  7. Let the no bake oatmeal cookies cool completely, then chill in the refrigerator for at least 30 minutes.
  8. Once set, peel the cookies off the parchment paper and enjoy!
