Ingredients:
- 2 lbs (900g) Fresh Strawberries, hulled and sliced
- 1 cup (200g) Granulated Sugar
- 1 cup (240ml) Water
- 2 tablespoons (30ml) Lemon Juice, freshly squeezed
- Optional: 1-2 tablespoons Vodka or Gin
Instructions:
- Combine sugar and water in a saucepan. Heat over medium heat, stirring until sugar dissolves. Simmer for 3-4 minutes. Cool completely in the refrigerator.
- Hull and slice strawberries.
- Combine cooled simple syrup, strawberries, lemon juice, and optional alcohol in a blender or food processor. Blend until completely smooth.
- For an ultra-smooth sorbet, strain the mixture through a fine-mesh sieve (optional).
- Pour the mixture into a shallow freezer-safe container.
- Freeze for 2 hours, then use a fork to break up any ice crystals.
- Return to the freezer and freeze for at least 2 more hours, or until solid.
- Let the strawberry sorbet recipe soften slightly at room temperature for a few minutes before scooping and serving.
