Ingredients:

  • 4 (6 oz) salmon fillets, skin-on
  • 2 tbsp avocado oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper

Instructions:

  1. Pat the salmon fillets aggressively dry with paper towels on all sides to ensure a proper sear.
  2. Lightly brush the fillets with avocado oil to act as a binder for the seasoning.
  3. Mix smoked paprika, garlic powder, onion powder, salt, pepper, and cayenne pepper in a small bowl.
  4. Generously dust the flesh side of the salmon with the spice rub, pressing it in with your fingers.
  5. Preheat the grill to medium-high heat (approximately 400°F).
  6. Grill the salmon fillets until they reach an internal temperature of 135°F-145°F.
  7. Remove from heat and let the salmon rest for 5 minutes to allow juices to redistribute.
