Ingredients:

  • 1 tbsp olive oil (15 ml)
  • 1 large onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 1 lb smoked sausage (450g), such as kielbasa or andouille, sliced into ½-inch rounds
  • 1.5 lbs Yukon Gold potatoes (680g), cut into 1-inch cubes
  • 1 red bell pepper, cored and chopped (about 1 cup)
  • 1 tbsp sweet paprika (15 ml)
  • 1 tsp smoked paprika (5 ml)
  • ½ tsp dried thyme (2.5 ml)
  • Salt and freshly ground black pepper, to taste
  • ¼ cup chicken broth or water (60 ml)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions:

  1. Chop the onion, garlic, potatoes, bell pepper, and sausage according to ingredient list descriptions.
  2. Heat olive oil in the skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute more.
  3. Add smoked sausage to the skillet and cook, stirring occasionally, until browned on both sides, about 5-7 minutes.
  4. Add the potatoes and bell pepper to the skillet.
  5. Sprinkle with sweet paprika, smoked paprika, thyme, salt, and pepper. Stir to coat evenly.
  6. Pour in the chicken broth or water, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then reduce heat to low, cover, and cook until potatoes are tender, about 20 minutes, stirring occasionally to prevent sticking.
  7. Potatoes are done when easily pierced with a fork.
