Ingredients:
- 1 tbsp olive oil (15 ml)
- 1 large onion, chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 lb smoked sausage (450g), such as kielbasa or andouille, sliced into ½-inch rounds
- 1.5 lbs Yukon Gold potatoes (680g), cut into 1-inch cubes
- 1 red bell pepper, cored and chopped (about 1 cup)
- 1 tbsp sweet paprika (15 ml)
- 1 tsp smoked paprika (5 ml)
- ½ tsp dried thyme (2.5 ml)
- Salt and freshly ground black pepper, to taste
- ¼ cup chicken broth or water (60 ml)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions:
- Chop the onion, garlic, potatoes, bell pepper, and sausage according to ingredient list descriptions.
- Heat olive oil in the skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute more.
- Add smoked sausage to the skillet and cook, stirring occasionally, until browned on both sides, about 5-7 minutes.
- Add the potatoes and bell pepper to the skillet.
- Sprinkle with sweet paprika, smoked paprika, thyme, salt, and pepper. Stir to coat evenly.
- Pour in the chicken broth or water, scraping up any browned bits from the bottom of the pan. Bring to a simmer, then reduce heat to low, cover, and cook until potatoes are tender, about 20 minutes, stirring occasionally to prevent sticking.
- Potatoes are done when easily pierced with a fork.
