Ingredients:

  • 4 bone-in, skin-on turkey thighs (about 5 pounds)
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons poultry seasoning (or your preferred All-Purpose Seasoning)

Instructions:

  1. Preheat the smoker to 180°F.
  2. Pat the turkey thighs dry with paper towels to remove excess moisture.
  3. In a small bowl, combine olive oil and balsamic vinegar.
  4. Brush the underside of the turkey thighs with the oil and vinegar mixture.
  5. Sprinkle a light coating of poultry seasoning on the underside.
  6. Flip the thighs and brush the skin side with the oil and vinegar mixture.
  7. Apply an even coat of poultry seasoning on the skin side.
  8. Place the thighs skin-side up on the smoker grill.
  9. Smoke the thighs for 45 minutes.
  10. Raise the smoker temperature to 375°F and cook until the internal temperature reaches 165°F, checking at 10-minute intervals.
  11. Remove from the smoker and let rest for 15 minutes before serving.
