Ingredients:
- 4 bone-in, skin-on turkey thighs (about 5 pounds)
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons poultry seasoning (or your preferred All-Purpose Seasoning)
Instructions:
- Preheat the smoker to 180°F.
- Pat the turkey thighs dry with paper towels to remove excess moisture.
- In a small bowl, combine olive oil and balsamic vinegar.
- Brush the underside of the turkey thighs with the oil and vinegar mixture.
- Sprinkle a light coating of poultry seasoning on the underside.
- Flip the thighs and brush the skin side with the oil and vinegar mixture.
- Apply an even coat of poultry seasoning on the skin side.
- Place the thighs skin-side up on the smoker grill.
- Smoke the thighs for 45 minutes.
- Raise the smoker temperature to 375°F and cook until the internal temperature reaches 165°F, checking at 10-minute intervals.
- Remove from the smoker and let rest for 15 minutes before serving.
