Ingredients:
- 6 slices Streaky Bacon (thick cut), diced
- 4 ears Fresh Corn on the Cob (kernels removed)
- 1 medium Shallot or Small Red Onion, finely diced
- 2 large Garlic Cloves, minced
- 1 teaspoon Smoked Paprika (Spanish preferred)
- 1/2 teaspoon Coarse Sea Salt, plus more
- 1/4 teaspoon Freshly Ground Black Pepper
- 1 tablespoon Unsalted Butter (optional boost)
- 1 tablespoon Fresh Lime Juice
- 2 tablespoons Fresh Chives or Parsley, finely chopped
- 1/4 teaspoon Pinch of Chilli Flakes (optional)
Instructions:
- Prepare the Ingredients (Mise en Place): Dice the bacon, remove the corn kernels (stand the cob upright and slice downwards), dice the shallot, and mince the garlic.
- Render the Bacon: Place the diced bacon into a cold, heavy-bottomed skillet over medium-low heat. Cook slowly for 8–10 minutes, stirring occasionally, until the fat is fully rendered and the bacon is deeply golden and crisp.
- Reserve Bacon and Fat: Use a slotted spoon to transfer the crispy bacon bits onto a paper towel-lined plate. Leave approximately 1 tablespoon of rendered bacon fat in the skillet. Discard excess fat, or reserve it for future use.
- Sauté Aromatics: Reduce the heat slightly to medium. Add the diced shallots (or onion) to the hot fat and sauté for 3–4 minutes until softened and translucent.
- Bloom the Spices: Add the minced garlic and the smoked paprika. Cook for 30–60 seconds, stirring continuously. This 'blooms' the paprika, intensifying the smokiness. Do not let the garlic burn.
- Cook the Corn: Add the corn kernels (fresh or thawed/drained) to the pan. Increase the heat to medium-high. Sauté for 5–7 minutes, stirring occasionally, until the kernels are hot, slightly tender, and have developed small patches of golden-brown char.
- Season: Season generously with salt and pepper. If using butter, stir it in now until melted and glossy.
- Brighten: Remove the skillet from the heat. Stir in the fresh lime juice. This acidity cuts through the richness beautifully.
- Combine and Garnish: Gently fold most of the reserved crispy bacon bits back into the corn mixture. Taste and adjust seasoning (salt, pepper, or another squeeze of lime).
- Serve: Transfer the sauté to a serving dish, topping with the remaining crispy bacon bits, chopped fresh chives, and chilli flakes (if using).
