Ingredients:

  • large sweet potatoes (about 1.5 lbs total)
  • Tablespoons olive oil
  • ½ teaspoons chipotle chili powder
  • teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • teaspoon packed brown sugar
  • ¾ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions:

  1. Peel the sweet potatoes. Cut them lengthwise into planks, then stack and slice uniformly into ¼-inch (about 6mm) thick fries. Consistency is key for even cooking.
  2. Place the cut fries in a colander. Rinse thoroughly under cold water until the water runs clear. Pat the fries completely dry using paper towels or a clean tea towel. This is crucial for crispiness.
  3. In a large mixing bowl, whisk together the olive oil, chipotle powder, smoked paprika, garlic powder, brown sugar, salt, and pepper until well combined.
  4. Add the dried sweet potato fries to the bowl. Toss thoroughly until every fry is lightly and evenly coated in the spice mixture.
  5. Preheat your air fryer to 380°F (195°C).
  6. Arrange the seasoned fries in a single layer inside the air fryer basket. Do not overcrowd. Cook for 10 minutes.
  7. Pull the basket out, give it a good shake to flip the fries, and return to cook for an additional 8–12 minutes, checking frequently after the 16-minute mark until they are tender inside and nicely browned/crisp outside.
  8. Remove cooked fries and transfer to a serving platter. Repeat the cooking process with any remaining fries, ensuring they are cooked in a single layer.
