Ingredients:
- 2 cups (300g) Granny Smith apples, peeled and finely diced
- 2 tbsp (25g) melted unsalted butter
- 1 tbsp (12g) ground cinnamon
- 2 tbsp (25g) brown sugar
- 1 cup (240g) sourdough discard (unfed)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (4g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) whole milk
- 1/2 tsp (2.5ml) vanilla extract
- 1 pinch of salt
Instructions:
- Sauté the diced apples in melted butter over medium heat for 3-5 minutes until they just begin to soften.
- Stir in the cinnamon and brown sugar. Cook for another 2 minutes until the apples are glazed.
- Remove apples from heat and let cool slightly.
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together the sourdough discard, melted butter, sugar, egg, and vanilla until smooth.
- Sift in the flour, baking soda, and salt. Fold gently with a spatula until no flour streaks remain.
- Gently fold in the sautéed apple mixture.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- Cool the loaf in the pan for 10 minutes, then transfer to a wire rack.
- Whisk powdered sugar, milk, vanilla, and salt together; drizzle over the warm loaf.
