Ingredients:

  • 1/2 cup (120g) active sourdough starter
  • 3 cups (375g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 2 1/4 tsp (7g) instant yeast
  • 1 1/2 tsp (9g) fine sea salt
  • 3/4 cup (180ml) warm whole milk
  • 4 tbsp (56g) unsalted butter, softened

Instructions:

  1. In the bowl of your stand mixer, whisk together the warm milk, active sourdough starter, and sugar until smooth.
  2. Add the instant yeast, salt, and flour. Mix on low speed until a shaggy dough forms.
  3. Add the softened butter one tablespoon at a time. Increase speed to medium and knead for 5-7 minutes until the dough is smooth, elastic, and clears the sides of the bowl.
  4. Place the dough in a lightly greased bowl, cover with a damp cloth or plastic wrap, and let rise in a warm, draft-free area for 1 to 2 hours until doubled in size.
  5. Gently punch down the dough to release air and divide into 12 equal pieces (approx. 60g each).
  6. Roll each piece into a tight, smooth ball.
