Ingredients:
- 1/2 cup (120g) active sourdough starter
- 3 cups (375g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 2 1/4 tsp (7g) instant yeast
- 1 1/2 tsp (9g) fine sea salt
- 3/4 cup (180ml) warm whole milk
- 4 tbsp (56g) unsalted butter, softened
Instructions:
- In the bowl of your stand mixer, whisk together the warm milk, active sourdough starter, and sugar until smooth.
- Add the instant yeast, salt, and flour. Mix on low speed until a shaggy dough forms.
- Add the softened butter one tablespoon at a time. Increase speed to medium and knead for 5-7 minutes until the dough is smooth, elastic, and clears the sides of the bowl.
- Place the dough in a lightly greased bowl, cover with a damp cloth or plastic wrap, and let rise in a warm, draft-free area for 1 to 2 hours until doubled in size.
- Gently punch down the dough to release air and divide into 12 equal pieces (approx. 60g each).
- Roll each piece into a tight, smooth ball.
