Ingredients:
- 1 cup (225g) unsalted butter, browned and slightly cooled
- 3/4 cup (150g) dark brown sugar, packed
- 1/2 cup (100g) granulated white sugar
- 1/2 cup (120g) sourdough discard, unfed (room temperature)
- 1 large egg, room temperature
- 2 tsp (10ml) pure vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (2g) baking powder
- 1/2 tsp (3g) fine sea salt
- 1 1/2 cups (250g) semi-sweet chocolate chips
Instructions:
- Place the butter in a skillet over medium heat. Melt and continue cooking, whisking constantly until the butter turns a deep golden brown and smells like toasted hazelnuts. Remove from heat and let cool for 10 minutes.
- In a large bowl, whisk the browned butter with the dark brown sugar and granulated white sugar.
- Stir in the sourdough discard, egg, and vanilla extract. Whisk until the batter looks glossy and smooth.
- Sift the all purpose flour, baking soda, baking powder, and fine sea salt into the wet ingredients.
- Use a spatula to fold the mixture together until just a few streaks of flour remain. Note: Overmixing makes the cookies tough.
- Fold in the semi sweet chocolate chips carefully.
- Scoop the dough into 2 tablespoon portions.
- Chill in the refrigerator for at least 2 hours. Note: This stops the cookies from spreading into pancakes.
- Preheat oven to 350°F (180°C).
- Bake the chilled dough on parchment lined sheets for 12 minutes until edges are mahogany colored.
