Ingredients:
- 3 cups (375g) All-purpose flour
- ½ cup (120g) Pumpkin puree (unsweetened)
- ½ cup (120ml) Warm milk (110°F/43°C)
- ½ cup (115g) Unsalted butter, softened
- ⅓ cup (65g) Sourdough starter (active or discard)
- ¼ cup (50g) Granulated sugar
- 1 tsp (6g) Instant yeast
- 1 tsp (6g) Salt
- 1 large Egg, room temperature
- ½ cup (115g) Unsalted butter, very soft
- ¾ cup (150g) Brown sugar, packed
- 1 tbsp (8g) Ground cinnamon
- 1 tsp (2g) Ground ginger
- ¼ tsp (1g) Ground cloves
- ¼ tsp (1g) Salt
- 4 oz (115g) Cream cheese, softened
- 4 tbsp (55g) Unsalted butter, softened
- 1 ½ cups (180g) Powdered sugar
- 1 tsp (5ml) Vanilla extract
- 2 tbsp (30ml) Heavy cream or milk
Instructions:
- In the bowl of your stand mixer, combine the warm milk, sourdough starter, and instant yeast. Let it sit for 5 minutes until slightly foamy.
- Add the pumpkin puree, softened butter, sugar, and egg to the mixer. Mix on low until combined.
- Add the flour and salt. Use the dough hook on medium-low speed for 5-7 minutes until the dough pulls away from the sides of the bowl and feels tacky but not sticky.
- Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 2-3 hours, or until doubled in size.
- Punch down the risen dough. On a floured surface, roll the dough into a rectangle roughly 12x18 inches.
- Spread the softened butter evenly across the dough, leaving a ½ inch border. Sprinkle the brown sugar and spice mixture evenly over the butter.
- Starting from the long edge, roll the dough tightly into a log.
- Using dental floss or a serrated knife, slice the log into 12 even rolls.
- Place rolls in a prepared baking pan. Cover and let rise for 45-60 minutes until they are touching and puffy.
- Preheat oven to 350°F (175°C). Bake for 22-25 minutes.
- Whisk together softened cream cheese, butter, powdered sugar, vanilla, and heavy cream until smooth. Spread over warm rolls.
