Ingredients:
- 1 cup (120g) all-purpose flour, unbleached
- 1 cup (240ml) milk (any kind works!)
- 1/2 cup (115g) sourdough starter, active or discard
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted and slightly cooled
- 1 tablespoon (15g) granulated sugar
- 1/2 teaspoon baking soda (2.5ml)
- 1/2 teaspoon baking powder (2.5ml)
- 1/4 teaspoon salt (1.25ml)
- 1/4 teaspoon vanilla extract (optional)
Instructions:
- Combine flour, milk, and sourdough starter in a large bowl. Mix until just combined. Cover and let stand at room temperature for 8-12 hours (or overnight).
- In the morning, whisk together the egg, melted butter, and sugar in a separate bowl.
- Pour the wet ingredients into the sourdough mixture and whisk until just combined. Don't overmix! A few lumps are okay.
- Gently fold in the baking soda, baking powder, and salt until just combined.
- Heat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Bubbles will form and start to pop on the surface as they cook.
- Serve hot with your favorite toppings!
