Ingredients:
- 720ml whole milk
- 200g granulated sugar
- 35g cornstarch
- 0.5 tsp fine sea salt
- 4 large egg yolks
- 45g unsalted butter
- 2 tsp pure vanilla extract
- 11 oz Nilla Wafers
- 6 large ripe bananas
- 480ml heavy whipping cream
- 30g powdered sugar
- 2 tbsp sweetened condensed milk
Instructions:
- In a heavy-bottomed saucepan, whisk together the sugar, cornstarch, and salt. Gradually pour in the milk while whisking constantly over medium heat until the mixture begins to steam.
- Temper the egg yolks by slowly drizzling one cup of the hot milk mixture into the whisked yolks while stirring vigorously. Pour the egg mixture back into the saucepan.
- Cook for 2-3 minutes until the custard bubbles and thickens. Remove from heat and whisk in the butter and vanilla extract until glossy.
- In a 9x13 glass dish, create a foundation of Nilla wafers followed by a layer of sliced bananas. Pour half of the warm custard over the fruit.
- Repeat the layers: wafers, bananas, and the remaining custard. Spread evenly with an offset spatula.
- Whip the heavy cream with powdered sugar and sweetened condensed milk until stiff peaks form. Spread over the cooled pudding and chill for 4 hours before serving.
