Ingredients:

  • 720ml whole milk
  • 200g granulated sugar
  • 35g cornstarch
  • 0.5 tsp fine sea salt
  • 4 large egg yolks
  • 45g unsalted butter
  • 2 tsp pure vanilla extract
  • 11 oz Nilla Wafers
  • 6 large ripe bananas
  • 480ml heavy whipping cream
  • 30g powdered sugar
  • 2 tbsp sweetened condensed milk

Instructions:

  1. In a heavy-bottomed saucepan, whisk together the sugar, cornstarch, and salt. Gradually pour in the milk while whisking constantly over medium heat until the mixture begins to steam.
  2. Temper the egg yolks by slowly drizzling one cup of the hot milk mixture into the whisked yolks while stirring vigorously. Pour the egg mixture back into the saucepan.
  3. Cook for 2-3 minutes until the custard bubbles and thickens. Remove from heat and whisk in the butter and vanilla extract until glossy.
  4. In a 9x13 glass dish, create a foundation of Nilla wafers followed by a layer of sliced bananas. Pour half of the warm custard over the fruit.
  5. Repeat the layers: wafers, bananas, and the remaining custard. Spread evenly with an offset spatula.
  6. Whip the heavy cream with powdered sugar and sweetened condensed milk until stiff peaks form. Spread over the cooled pudding and chill for 4 hours before serving.
