Ingredients:

  • 4 lbs Sweet Potatoes (Orange Flesh), peeled and cubed
  • 1/2 cup Unsalted Butter, melted (for filling)
  • 1/2 cup Light Brown Sugar, packed (for filling)
  • 1/4 cup Granulated Sugar
  • 2 Large Eggs, slightly beaten
  • 1/4 cup Whole Milk or Heavy Cream
  • 2 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon (for filling)
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Salt (Fine Sea Salt)
  • 1 cup All-Purpose Flour (for streusel)
  • 1/2 cup Light Brown Sugar, packed (for streusel)
  • 1 cup Pecan Halves or Pieces, roughly chopped
  • 1/2 tsp Ground Cinnamon (for streusel)
  • 1/2 cup Unsalted Butter, cold and cubed (for streusel)

Instructions:

  1. Prep Potatoes: Peel the sweet potatoes and cut them into uniform 1-inch cubes. Place the cubes in a large pot, cover with cold water, add salt, and bring to a boil. Reduce heat and simmer until the potatoes are fork-tender (about 20–25 minutes). Drain thoroughly and let them steam dry for 5 minutes.
  2. Mash: Place the hot potatoes in a large bowl. Mash them until smooth. (For extra smooth filling, use an electric mixer on medium speed.)
  3. Combine Wet Ingredients: In a separate bowl, whisk together the melted butter, both sugars, eggs, milk/cream, and vanilla extract.
  4. Mix Filling: Pour the wet mixture into the mashed potatoes. Add the cinnamon (1 tsp), nutmeg, and salt. Stir gently until just combined. Do not overmix.
  5. Transfer: Pour the sweet potato mixture into the prepared 9x13-inch baking dish, smoothing the top with a spatula.
  6. Combine Dry Streusel Ingredients: In a medium bowl, whisk together the flour, 1/2 cup brown sugar, chopped pecans, and 1/2 tsp cinnamon.
  7. Cut in Butter: Add the cold, cubed butter (1/2 cup) to the dry mixture. Use a pastry blender, fork, or your fingers to cut the butter into the flour mixture until large, coarse crumbs form.
  8. Assemble and Preheat: Sprinkle the streusel topping evenly over the sweet potato filling. Press down very lightly. Preheat oven to 350°F (175°C).
  9. Bake: Bake for 35 to 40 minutes. The casserole is done when the filling is set and the pecan streusel is deeply golden brown.
  10. Rest: Let the casserole cool and set for at least 10 minutes before serving.
